What remains after this separation is the cacao solid, which is then dried and ground into cacao powder. There are two main types of cacao powder: natural and Dutch-processed. Dutch-processed cacao powder has been treated with an alkalizing agent to neutralize its acidity, resulting in a milder taste and darker color.
