Depending on the region, coffee cherries are usually harvested by hand or machine, with handpicking being the preferred method for high-quality coffee. Once harvested, the coffee cherries undergo processing to remove the outer layers and extract the green coffee beans. There are two primary methods of processing: the wet method and the dry method. In the wet method, the cherries are pulped to remove the skin and pulp, followed by fermentation to loosen the remaining mucilage. The beans are then washed and dried. On the other hand, the dry method involves drying the cherries in the sun before mechanically removing the outer layers.
After processing, the green coffee beans are sorted, graded, and packed for transport. This includes removing defective beans or foreign material and categorizing the beans based on size, color, and density. The grading process ensures consistency and allows buyers to choose beans that match their specific requirements.
Once packed, the green coffee beans are ready for export to various destinations around the world. This stage involves meticulous logistics to ensure the beans' timely delivery while maintaining their quality and freshness. The beans are typically shipped in large bags or containers, and proper handling and storage practices are essential to prevent damage or deterioration during transit.
