Kaju production, also known as cashew nut production, is an important agricultural activity worldwide. Cashew trees are native to northeastern Brazil but are now cultivated in several countries due to the increasing demand for cashews and their byproducts.
Cashew Tree Cultivation
The cashew tree, scientifically known as Anacardium occidentale, requires a tropical climate with high heat and humidity for successful cultivation. It can grow up to 12-14 meters in height and has a productive lifespan of approximately 25 years. Brazil, Vietnam, India, Nigeria, and Ivory Coast are among the leading cashew-producing countries.

Harvesting
The cashew nut is attached to a fleshy, pear-shaped pseudofruit called the cashew apple. When the cashew apple turns bright yellow or red, it indicates that the nut is ready for harvest. It takes approximately 2-3 months for the cashew apples to mature after flowering.
Harvesting cashews is a labor-intensive process as the nuts are contained within a toxic shell, which can cause skin irritations and burns if not handled properly. Workers need to wear gloves and take precautions while removing the nuts from the shells.
Processing
To extract the edible cashew nut, the harvested nuts are first sun-dried to reduce moisture content. The drying process usually takes around three days and helps prevent mold growth. After drying, the nuts are separated from the shells, typically using mechanical methods or manual labor.
Next, the cashews are roasted to remove the remaining outer skin, which contains a toxic oil known as cashew balm. Roasting also enhances the flavor of the nuts. Once roasted, the cashews undergo the process of shelling, grading, and sorting. High-quality cashews are generally hand-picked to ensure uniformity and remove any defective or discolored nuts.
Exports and Uses
Cashews are widely consumed worldwide and are a popular snack due to their rich flavor and nutritional benefits. They are also used extensively in the food industry for making sweets, desserts, bakery products, and as an ingredient in various cuisines.
